The koala bear!


Aussie native #3!
The koala bear is one of the animals your bound to meet while visiting aussie! Maybe not in the wild but for sure at any zoo or wild life park.
They have super long claws, tiny eyes and a big black nose. They are so docile and soft and cute!
I have petted quite a few! And even seen a tiny new born one. I love koalas!

So, to make this I simply cut the shape of the koala in a lawson's bread (because the slices of the lawson's bread is big!) (you can use any big slice bread for sure. Or two slices of normal sized bread ;) and put on peanut butter.
The tree stem is of homemade granola, which is super yum and pretty good for you too.

Recipe:
You make tree trunk granola like this:


Set the oven to 150c/300f degrees

1: whisk a large eggs egg white. (Just the white!) or two small ones. Not very wisked. Just a quick wizz with a hand wisk :) in a large bowl.
2: add 3 cups of rolled oats to the bowl and 1 1/2 cup shredded coconut


3: and add 1 1/2 cup chopped nuts
(i used brazil nuts, cashew nuts, almonds, chia seeds, pistachios, walnuts and hazelnuts)
4: add 1/4 cup sesame seeds
5: 2 table spoons coconut oil
6: add 1/2 tsp cinnamon
7: 1/2 cup agave syrup
8: 2 table spoons of coconut sugar if you want it a bit sweet. I skipped this...
9: toss to combine
Spread on baking paper and put in the middle of your oven for 40/50 minutes turning them every 10 minutes.


Dont let them burn! But they should be nice and golden! They get nicely yummily crispy when cool!
And you can eat them with milk or like they come. In an airtight container they should keep for about 2 weeks.
Tips: You can also add sultanas, dried fruits etc after the cooling process :)


Now make your tree trunk and cut kiwifruit for leaves and you have an authentic aussie natives plate for your kiddo :))

My son dipped his pb sandwich in the granola, so he ate pb/granola sandwich!
And he ate everything on his plate, which, if you know my eats-like-a-bird son, is incredibly awesome! ~ happy mom!

Now is weekend and Ill be trying to sleep some today. My little girl has a fever and is not too happy to do anything alone. (Sleeping or playing)
so Ill be catching up on them zzZZz I reckon.
